COLORFUL POTATO SALAD

INGREDIENTS SALAD

1,5 kg potatoes (light, red, purple)
3 tablespoons of olive oil
salt, pepper
1 bunch of radishes
5 spring onions
3 handfuls of baby spinach
Red radish sprouts

7 tablespoons of gravlax sauce
2 tablespoons of sunflower oil
4 tbsp. water
1 tablespoon of lemon juice
salt, pepper

1,5 kg potatoes (light, red, purple)

5 spring onions
3 handfuls of baby spinach

PREPARATION

Preheat oven to 200 degrees. Wash potatoes thoroughly and cut into bite-sized pieces. If the potatoes are small, it is enough to cut them in half. Boil in salted water for 5 minutes, drain and mix in a bowl with olive oil, salt and pepper. Put the potatoes on a baking tray with baking paper and bake on the middle rack in the oven for about 30 minutes until soft and a bit crispy.

Wash radishes and green onions, slice radishes, cut green onions into rings. Mix potatoes with radishes, spring onions and baby spinach in a bowl.

For the dressing, put all ingredients in a screw-top jar and shake the mixtures well. Mix dressing into potato salad and season salad with some lemon juice and salt to taste.

TIP

Sprinkle the potato salad with a few sprouts before serving. The salad goes well with roasted or grilled salmon
